This healthy and delicious Beef and Broccoli by Vesta's Kitchen is super easy to make and a great healthy meal prep option for this summer!
1.5 lb lean flank steak (cut into thin slices)
3 cups broccoli florets (steamed)
1 tablespoon garlic (minced or paste)
1/2 cup low sodium beef stock
1/2 cup Liquid Aminos
1 tablespoon ginger
2 tablespoons arrowroot starch
5 tablespoons coconut sugar

1In a small bowl, whisk together beef stock, liquid aminos, ginger, coconut sugar, arrowroot starch and set it aside.
2Set a saucepan on medium high heat and spray it with a little olive oil. Once the pan is hot, toss in garlic, then add the steak to the skillet and cook for about 5 minutes.
3Add the bowl of sauce to the skillet, reduce the heat to medium and stir the sauce so that it begins to thicken. Once the sauce is smooth add the broccoli and fold everything together. Remove it from the heat and garnish with green onions and sesame seeds. Enjoy!
